Description
IKE Investments began operation of a milk dessert production plant in 2006 (liquid cream, mousse, caramel custard). Industrial manufacturing of such products was new to Quebec. The project posed numerous challenges that were overcome including:

The plant included raw milk receiving, a milk treatment room, a recipe preparation room, a processing room, a packaging room, raw material & finished product warehouses, utility areas & offices. For marketing reasons, the drawing & specification production and plant construction schedule was nine months. The plant had to conform to standards of the Canadian Food Inspection Agency (CFIA), the Ministère du Développement durable, Environment & Parks Quebec, the City of Saint- Hyacinthe, & HACCP.
